Black Bean and Butternut Squash Dopiaza with Spiced Rice

It's that time of the year where all I crave is comfort food, especially anything full of carbs. There's also something about Indian style spices that scream comfort food to me, it's usually what I crave during this cooler, rainy weather. I threw in the sauteed spinach because I just returned from a 2 week vacation and was in serious need of a post-vacation detox (no regrets though). 

This was actually inspired by a meal that I had on vacation, I had no idea what dopiaza was but it was so good. After some googling after I got home, I found out it is a dry Indian style curry. So, this is what I came up with and I paired it with an Indian spiced brown rice. Red wine is always a good idea, along with the naan too. 

There's a bit of time needed to chop everything, but other than that this is really simple to throw together. Simplicity has been my ally since my schedule has been so busy lately. This is vegan as well (unintentional, I am not a true vegan) so it is perfect for your next meatless Monday.
