The grilled corn obsession continues...
This recipe is ridiculously easy, but tastes like you spent a lot of time in the kitchen. This took under 30 minutes for me to throw together, if you are pretty comfortable in the kitchen it will probably take around 20 minutes. So it's perfect for weeknights, especially taco Tuesday. Yasss.
I feel like vegetarian tacos don't get enough love, they are overshadowed by steak, pulled pork and so on sorts of recipes. The fresh summer produce in these takes it up a notch, and the flavor isn't lacking whatsoever. Might as well eat all the fresh corn and tomatoes while we can, right?
So make the tacos, drink lots of margs or beer with them, and enjoy the gorgeous summer weather.
