Summer is starting to come to an end, and this recipe is perfect for using the last of summer produce.

So, about this polenta recipe. There's fresh corn, cherry tomatoes, basil and chicken sausages. It's comfort food to the max. Cheese is mixed into the polenta too, I used a parmesan gouda blend (I know right?), so good. Feel free to use your favorite cheese though. A dash of hot sauce on top was really nice too. It's perfect because summer produce is still lingering, but we are starting to feel the chill of fall coming on.
This was simple to whip up, making it an impressive comforting weeknight dinner. It's like a big hug in a bowl.
