Roasted Tomato Harissa Pasta

This is one of those recipes that came from random thoughts while spacing off at work (oops). The inspiration came from a recipe I saw on Bon Appetit, but I had no idea if my version would work. I started throwing it all together and crossed my fingers hoping that it wouldn't be totally yuck. Luckily for me (and you), it totally worked!

My boyfriend/taste tester ate this in total silence, so I knew it had to be good. The main reason I was so nervous about it is because...it has sardines, which I have never, ever used before in a recipe. But don't run, it is so good! I used a can of sardines that were packed in harissa and oil from TJ's (there are other brands you can use as well), and the kick from the harissa is so nice and the sardines add a lovely flavor too. 

The best part is that this came together in about 30 minutes, so it is perfect for summer weeknights when you want something filling but not too heavy. This pasta has a light sauce that coats the noodles from the harissa and oil from the can of sardines, and reserved pasta water. Once the sauce has thickened and coated the noodles, you toss in the roasted tomatoes and fresh basil. Top it all off with a poached egg and grated Parmesan, so easy and tasty. 

I paired the pasta with a glass of chilled Sweet Cheeks Rosy Cheeks. I think the sweet rosΓ© paired well with the slightly spicy pasta.  Rosy Cheeks is hands down the best rosΓ© I have tried, and it's local which is always a bonus. 

I mean, that runny yolk in the pasta? Ugh, so good.
