This salad is summer in a bowl. I've become a wee bit obsessed with grilled corn and I can't eat corn any other way now. It's too good.
The grilled corn and thinly sliced radishes are tossed in a tangy and slightly smokey dressing, and lots of chopped fresh herbs. I went with cilantro, basil and mint this time, but you can use whatever you like the best.
You can serve this slightly warm right after assembling, or let it chill in the fridge to serve later. It is really good when the dressing has a chance to soak in.
