Lemon Ricotta Fritters with Blueberry Sauce

Hi there. My name is Megan and I have a serious love for donuts, and anything related to a donut. Like these fritters, gah.  

It's a serious problem when you are going to Mexico in a week and your brain is telling you to be "bikini ready" (haaa), but your heart says donuts. So you always follow your heart, right? I sure did that day, no regrets. 

These are crispy on the outside, but stay super fluffy on the inside. And the blueberry sauce compliments the lemon flavor so nicely. They take no time at all to whip up, so they are perfect to go with breakfast this weekend. Or a little sweetness to perk up your afternoon coffee.

There's seriously nothing better than fresh, hot donuts/fritters. Jack and I demolished these in about 10 minutes after I finished with the photos. We sat on the floor, eating one fritter after another, dunking them in the blueberry sauce, and sharing the big cup of coffee. It was dumping rain outside, a typical dreary rainy day in Oregon, so these brightened up our Saturday afternoon.
