Sweet Potato Soyrizo Hash

I have a breakfast for dinner situation for you today. This has been a go to meal for me for a few months now, and I loooove it. I almost always have these ingredients on hand, and it comes together in under 30 minutes. 

Perfect weeknight dinner, right? Or an easy brekkie, whatever floats your boat. I use soy chorizo, but you can use regular chorizo if that is what you like. Just adjust the cooking time a bit to ensure it is cooked through. To be honest I don't notice a difference with the soy, the texture is still good and the seasoning is spot on. I get mine from TJ's but I have seen other brands as well. 

I always top this hash off with a crispy olive oil fried egg. YUM. And they look so pretty too, I had fresh eggs so the yolk color here is amazing. You can easily double the recipe to serve more people if needed, I will do that sometimes to have leftovers for the week. 

I don't even put cheese on this, who am I?
