I am finally on break from school, and finally able to post this recipe! Yay! This might have been the most annoying term I have had so far. Sigh. So glad to be done with it.
This is a "reset" salad for me; you know when you eat too much ice cream over the weekend and crave something green and healthy? Yeah. This is it. It's definitely hearty enough to be meal from the beans and beets, but it's not a boring salad whatsoever.
If you do meal prep, this salad is great for that too. Roast the beets ahead of time, and chop the kale. Then you have a super quick and easy weeknight meal.
It's also starting to be the time where we are all needing to ready for summer. More greens and less cheese, am I right? I am certainly thinking about that because we are going to Mexico in May!! I am so excited to have a real vacation, and I will definitely write a massive post about our trip. We are going to Tulum, if you have been there tell me where we need to go! I am already scoping out the best places for tacos.
