This soup is my attempt to be healthier and more balanced. It's full of kale, and has the smallest, tiniest amount of cheese. Winning. If you are on a super strict diet right now, you could omit the cheese (ugh) and it would still be a really good option.
^^^Do you see that little bowl of raw kale up there? Percy kept eating the kale. Wtf. A lot of people won't touch kale, and my cat is eating it voluntarily. He loves spinach too, he has to be the strangest cat I have ever met.
The broth of this soup is so flavorful. First we brown the chicken sausage, then remove it and saute the veggies in the leftover oil. Add the chicken broth and a small piece of parmesan rind. Oh yes. Add some seasonings and let it simmer for a bit, then add the sausage and kale back into the soup. Bam. Done. It tastes like it's been cooking for hours, but I let mine simmer for about 25 minutes.
It's been dark and rainy here the past few days, and it doesn't seem to be stopping anytime soon. If you are dealing with the same nasty weather, this colorful soup will be sure to perk you up.
