Vegetarian Stuffed Acorn Squash

Can you believe it's almost Thanksgiving?

I was given the task of figuring out something that my vegetarian, gluten-free and dairy-free sister could eat on Thursday. So I came up with this, I wanted something that feels Thanksgivingy so she didn't miss out too much. Obviously hers will not have Parmesan on top, so if you want to make this vegan then feel free to leave it out. I just love cheese, so I couldn't.

The stuffing is quinoa, leeks, mushrooms, brussels sprouts, cranberries, and cannellini beans. So much yum. I wanted these to be something hearty and filling. If you get smaller squash you can serve this as a side too.

This is so simple to make, but it is packed with flavor. You could prep these the day before and reheat them in the oven too. You really can't go wrong with them.
