Grilled Romaine Salmon Salad with Creamy Lemon Avocado Dressing

This salad tastes like summer.

Lately I have been grilling all the things. And I love it! I even grilled some watermelon as a side for this.

You may be thinking that I am going a little too far by grilling the romaine....but I promise you it is so good! The romaine gets a little charred and has a lovely almost smokey flavor, but still retains a good amount of crunch.

Salad-y things: romaine (pre-grilling), plum tomatoes, and grilled corn. The dressing is so, so simple. Avocado, lemon juice, salt, pepper, and water to thin it out a bit.

Salmon! I cooked this the same way that my mom does, it turns out great every time. Sear both sides, bake in the oven, and let it rest. Yum!

It's best to prep everything before grilling the romaine. The romaine is best when it is served immediately, but it only takes a few minutes. In the pictures I kept the romaine in one big piece, but only because it looks pretty. It's a lot easier to chop it up right after grilling and serve it like that. Either way it's delicious.
