These are my Dad's favorite. If I am not sure what to get him for his Birthday or Father's Day, I always know that these cookies will be a winner. I actually made these for this last Father's day. :)
The recipe came from my Grandma (on my mom's side), the only change I made was substituting butter for shortening. I don't know why, but shortening kind of freaks me out. Butter all the way.
There's a little trick to getting a thin and chewy molasses cookie. And that is to smack or drop the tray of freshly baked cookies on the counter. This makes the cookie flatten out, and become so chewy and delicious.
I also made pretty big cookies because, why not?
