Mango Pork Enchiladas with Chunky Roasted Tomatillo Sauce

There's really nothing better than Mexican food.

For me, it hits the spot every single time.

The pork is slow cooked in the crock pot in beer, lime juice, orange juice, and spices. This would be a great weeknight meal. Cook the pork while you are at work, come home and make the sauce (which is super simple), assemble and bake. I personally love low-key recipes like this one, that seem like a lot of effort was made.

For the sauce, we are going to take these beautiful tomatillos and roast 'em with Serrano peppers, onion and garlic.

After roasting, it all goes into the food processor with spices, cilantro and lime juice. And bam, sauce is done. Easy peasy.

For the mango, simply puree it in the food processor. We are going to spread a layer of it in the enchiladas under the pork. So. Flipping. Good.

Ready for enchilada assembly. Cheese is not pictured, but it is necessary.

I topped them with more cilantro, avocado and sour cream!
