Greek Stuffed Artichokes with Tzatziki Dip

Artichokes! Stuffed with some of my favorite things ever.

I mean, look at that.

These cute little guys will be boiled until softened, STUFFED, and baked a bit. So good.

The stuffing is a mixture of panko, green olives (mine were jalapeno stuffed), kalamata olives, feta, spices, and a bit of olive oil. If you don't love the briny flavor of the green and kalamata olives, then just substitute for black olives. I won't judge ya.

Stuffed to the max and ready for the oven.

These would make a great appetizer. I may have eaten these for lunch though...

The tangy tzatziki dip is perfect for these. The recipe will make a little extra, but it's great on sandwiches and salads too.
