Goat Cheese Macaroni with Roasted Asparagus and Artichoke Hearts

This mac and cheese is cuh-razy good.

It's indulgent and creamy. Simply ridiculous. The goat cheese is so creamy and tangy.

I'm also the kind of person that like stuff in my pasta. I can't just have plain macaroni and cheese anymore, I'm always finding something to add to give it a little oomph. And then I feel like I can get away with eating this as a meal on it's own, ha.

The asparagus is roasted in a bit of olive oil and salt and pepper before being added to the pasta. I have been a little obsessed with asparagus lately, it's just so good.

These guys will be chopped up and thrown in at the end.

You need this in your life.
